Kick-start your fitness plan this week by serving up this frittata for dinner

Spinach, leek and broccoli frittata for everybody.

IT’S THE START of another week. And after the weekend you’ve had you swear that, this time, it’s going to be different. You’re going to cleanse your system, drop pounds, run faster, lift heavier and it all starts with this spinach, leek and broccoli frittata.

A nutritious, healthy and easy to make dinner, packed full of protein, vitamins and minerals. Broccoli is a Super Food. It’s nutrients include vitamin C, vitamin A, folic acid, calcium, and fibre.

Prep Time: 20 minutes.

Cooking Time: 20 minutes.

Ingredients (to serve two)

  • A leek.
  • Two cloves of garlic.
  • Six eggs.
  • About two cups (or equivalent) of broccoli.
  • One cup of spinach.
  • Two tomatoes.

Wash the spinach, chop the other vegetables into small pieces and peel off the garlic cloves.

Crack the eggs. Use five egg whites and one whole egg. Sauté the vegetables on two tablespoon of olive oil on a medium heat.

When the broccoli is soft, add the chopped garlic. Put the vegetables into a casserole dish and pour the whisked eggs over the mixture. Season with salt and pepper

Place the casserole dish into a preheated oven. Bake at 175° C for 15 – 20 minutes.

Serve it up with a salad.
