The42 recipe book: High-protein spinach and goats cheese frittata

Quick, easy and perfect for a post-gym meal.

OVER THE NEXT couple of Mondays, we’re going to be opening The42‘s recipe book again to bring you a few ideas for your post-gym or post-match meal.

We’re going to start off with a high-protein spinach and goats cheese frittata which is incredibly easy and simple to make and has good fats, carbs and protein all in one.

Ingredients:

  • 8 medium eggs
  • 2 cups (25g) fresh herbs (basil, tarragon, parsley or any mixture of herbs)
  • ½ cup goats cheese
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • 1 cooked potato
  • 2 cups baby spinach
  • 12 vine tomatoes
  • 1 tablespoon olive oil

Instructions:

  1. Preheat the oven to 150°C.
  2. Crack the eggs into a bowl and whisk.
  3. Roughly chop the herbs and add them with the goats cheese and spices to the eggs and mix.
  4. Cut the cooked potato into bite-sized pieces and gently fold it together with the spinach and vine tomatoes into the egg mixture.
  5. Heat a medium-sized pan with 1 tablespoon of olive oil and pour in the egg mixture.
  6. Cook for approximately for 2 minutes at low heat, then transfer the pan to the oven and bake for 25-30 minutes.
  7. Serve with salad or green vegetables.
